FNH 330 Lecture Notes - Lecture 6: Veuve Clicquot, Grape, Vitis Vinifera
Document Summary
An introduction to wine science background notes to supplement lectures (see lecture for updates) Day 1: wine & society some history of wine. Very recently, an archeological dig found the oldest known winery =- this was in an armenian cave (circa 4000 bc). The archeological dig found remnants of grapes, apparently crushed (by foot) in a basin so that the juice ran to a vat. While some of the juice may have been consumed fresh, its thought that the juice soon fermented to wine (of sorts) and was partitioned to clay jars. Some ancient records also indicate the spread of grape (vitis vinifera) growing & winemaking through the old world by the egyptians (1800-1700 bc). Records from 1750 bc, indicate the egyptians grew grapes & made wines for celebration, & also used wine for medical uses. For the latter, wine was mixed with various herbs, spices etc for worms, as a diuretic, for asthma, as an enema .
