Salivary amylase is found in saliva of the digestive system. Catalyzes the breakdown of starch molecules into its smaller subunits such as maltose. This process is known as hydrolysis since it requires water in order to digest the substrate (hydrolytic reactions) Mcilvaine"s buffer is added to maintain optimal ph and 37 degrees optimal temperature for salivary amylase activity. Iodine test was conducted until it becomes negative (light brown) The higher the concentration of the enzyme the faster the test resulted in negative. Phosphorylase enzyme that is produced by plants and it is able to remove glucose molecules from the non-reducing ends of starch molecules reaction requires inorganic phosphate from phosphoric acid in order to break the glucose.
