Document Summary

Oilseeds: higher fat legumes include soybeans, cottonseed, sesame seed, sunflower seed, and peanut seed. Soybeans: are a legume with a dual role as an oil bean and a food bean, because of the fat and protein content. Soybeans are processed into a broad variety of soy products. Basic unit of muscle tissue is the muscle cell or muscle fiber which is surrounded by the cytoplasmic substance called sarcoplasm. The muscle fiber consists of many units called muscle fibrils or myofibrils. These myofibrils contain contractile proteins organized into a array of thick and thin rod like filaments the thick filament is called myosin and the thin filament protein is called actin. When muscles contract these filaments form crosslinkages with each other- bonds that produce a new protein called actinomyosin. Connective tissue sheets that surround muscle bundles are collagen sheets.
