Diferent areas of the plasma membrane perform diferent funcions. Unsaturated lipids (double bonds exist between some carbons) increase luidity. Saturated fats (each carbon in the chain have all their hydrogens atached) reduce luidity. Crystal signiies order which both states have within membrane regardless of temperature. Membrane luidity must be maintained as it is very important to cell funcion. Balance between ordered (rigid) structure and disordered structure allows: Dynamic interacions between membrane components (e. g. proteins can come together reversibly)
