Nutrient = substance in food that promotes normal growth, maintenance and repair: macronutrients provide calories. Bulk of what we eat = carbohydrates, lipids and proteins (table 24. 1: micronutrients do not provide calories but essential co-factors for enzymes and/or function. Vitamins and minerals only required in minute amounts: essential nutrients = cannot be made fast enough to meet body"s need so must obtain from diet. Kilocalories (kcal) = measurement of energy value of food: one kcal = amount of heat energy needed to raise 1 kilogram of water 1oc, c alories = unit dieters use to determine food energy value. Carbohydrates mainly derived from plants: sugars (monosaccharides and disaccharides) from fruit, sugar cane, sugar beets, honey and milk, starch = polysaccharide found in grains and vegetables, fiber = indigestible polysaccharides found in plants. Insoluble and provides roughage which increases bulk of stool. Pectin = soluble fiber found in apples and citrus foods.
