Because cellulose has different polymeric linkages than starch which star digesting enzymes cannot cleave. Chitin, also a structural polysaccharide, is found in arthropod exoskeletons. Chitin also provides structural support for fungal cell walls. Composed predominantly of h and c- are not "classic" polymers. Formed by bonding glycerol to three fatty acids. 1 gram of fat stores twice as much energy as 1 gram of glycogen or starch. Fats can also be structural in providing cushioning and insulation. Saturated- all carbons are linked by singles covalent bonds.
