This is hypothesized because ethanol causes lactose to be separated from the fats and proteins of milk, which possible could cause the reaction to slow down. In order to complete this lab, the amount of milk and lactase remained the same throughout each test tube, and the amount of ethanol was changed. The independent variable was the amount of ethanol while the dependent variable was the approximate amount of glucose that was produced. First, 10 ml of milk was put into 6 different test tubes, which were labelled 1 through 6. 1-2 lactase pills were crushes using the mortar and pestle. So that premature reactions were avoided, the ethanol was put into the test tubes at the same time as the lactase.
