Fats are stored in the body in the form of triacylglycerols (aka triglycerides) Triacylglycerols are made up of 3 fatty acids which have been esterified with glycerol. Triacylglycerols are usually made up of 2 or more different types of fatty acids. Most of our fat stores are found in our adipose tissue in specialized cells called (cid:494)adipocytes(cid:495) Some tissues like muscle also have a small amount of fat stored within the cell. An enzyme called lipase releases the free fatty acids from glycerol moiety by hydrolyzing the ester bonds.
