Us food & water security in an uncertain climate: food, environment, and sustainability. Waste- there is a lot of waste in production and retailing, and a smaller portion comes from the consumer. So, reducing is the most important of the 3 r"s of recycling! Water- a lot of water is wasted in production of meat, especially beef (15,400 liters per 1 kg) Urbanization is increasing at a steady rate upward sloping, while rural areas have been constant (straight line) no change and now declining. Localization and food miles- farms are now using a lot more fuel, fertilizers and electricity :/ Meat and dairy- being vegetarian helps the environment because of more efficient land use and less impact on environment. Sustainable diets: past, present, and future: small fields for large impacts on the colorado plateau. You can"t see much out there when you"re on the colorado plateau.
