Nutritional science definitions
Dietary Reference Intakes and food labels
Assessing nutritional claims
Dietary Reference Intake (DRI) Standards
- Will have EAR/RDA or AI (not both); bracketed for gender, pregnancy
- Estimated Average Requirement (EAR): likelihood that intake is adequate in a
population
o Based on extensive research
o If every person in the population consumed this amount, 50% of them would be
getting enough to meet their nutrient requirements
- Recommended Dietary allowance (RDA): goal to to help ensure adequate intake in
an individual
o Based on adequate research (Statistically determined from EAR)
o If every person in the population consumed this amount, 97% of them would get
enough to meet their requirements
- Adequate Intake (AI): Likelihood that intake is adequate when no RDA is set for a
nutrient
o Evidence still not complete
- Tolerable Upper Intake Level (UL): Likelihood of excess or toxicity
o typically only for vitamins and minerals
Other Dietary Reference Standards:
- Estimated Energy Requirement (EER):
o kcal that should be consumed per day
- Acceptable Macronutrient Distribution Range (AMDR)
o (For adults) percent of total kcal (EER) that should be:
carbohydrates: 45 65%
protein: 10 35%
fats: 20 35%
DRI TIMELINE
1) 1943: NAS (National Academy of Sciences) publishes 1st RDA values
- In US, undernutrition is a bigger problem
2) 1956: USDA (US Dept of Agriculture) puts out 4 basic food groups (carbs, vegetables,
protein, fats)
- (starting from mid 1) and 2)) mortality rates for infectious diseases drop but rates of
obesity and heart diseases and diabetes increase
3) 1990: FDA mandates labeling of all packaged foods
4) 1994: NAS publishes modern DRI values
5) 2010: Updated U“DA dietary recoedatios My Plate
Food Labels
FDA: Food and Drug Administration (enforces laws passed by Congress)
- Amount and origin of product
- Ingredients
