- Saturated and unsaturated fatty acids
o All unsaturated fatty acids synthesized by plants and animals have double bonds
in cis configuration, Trans fatty aids don’t our naturally
o saturated fatty acids can pack more closely together than unsaturated FA → SFA
have higher melting point and the triglyceride composed of the fatty acid is a
solid (fat), UFA have lower mp/oil (liquid)
o longer chain → higher mp and more likely to be fat at room temp
- Fatty Acid Nomenclature
o Saturated fatty acids (no double bonds)
o Monounsaturated fatty acids (single double bond)
o Polyunsaturated fatty acids (two or more double bonds)
o Long-chain fatty acids have 12 or more carbons
o Short-chain fatty acids have 10 or fewer carbons (more soluble)
▪ Referring to dietary FA, don’t onfuse with SCFAs produed y
fermentation of soluble fiber by gut microbiota, which only include
acetate, propionate, and butyrate
