Food toxicology and important people: food toxicology- the study of the adverse effects of poisons associated w/ foods in living organisms. Deeply rooted in human civilization history: food and drink are the primary vehicles for exposure to chemical and bacterial toxins. Average of consuming 3 meals and 1 liter of fluids each day = 1095 meals and 365 liters of fluids a year. Large opportunity for direct exposure: our ancestors in their quest for food had to learn through trial and error which foods were safe and which were harmful and to avoid. 150 to 350,000 species of food: shen nung- father of chinese medicine. Died of a toxic overdose: ebers papyrus- oldest well preserved medical document from ancient egypt dated from about 1500 bc. Has 110 pages on anatomy, physiology, toxicology, spells, and treatments on papyrus. Committed suicide w/ an egyptian asp (cobra: paracelsus- father of toxicology.
