Animals must be living when they enter the slaughter area. Main purpose of the meat lab is research. Everything on the kill oor is washable for maximum sanitation. Captive bolt gun knocks animals unconscious then they are allowed to bleed out. Bleeding out provide a higher quality meat product. Cattle and sheep are placed in the knock box to be stunned. Animals are not housed overnight in the meat lab but can be. There are no loud noises and no forceful humane reasons and to reduce stress. Pigs respond to stress much more than any other animal. Pork under stress will either be pale, squishy, and ooze or dark, rm, and dry. When an animal is hung, the feet are removed and the hide is saved. Sheep pelt is saved and removed by hand. Pig hides aren"t removed instead they are put in the scalder to be cleaned and loosen hair.
