Speaker"s organization: one living wage, movement + legislation. Restaurants are fastest growing but lowest paying industry in us. 2nd largest employment sector in the us. Speaker blames of people of us living under poverty line on restaurants: National restaurant association (nra) lobbied after emancipation of slavery for tipped workers minimum wage to be lower. Tipping started in europe in addition to wages. Directly after emancipation, nra hired wage-less former slaves that had to rely on merciful customers" tips. When minimum wage was introduced, excluded farm, domestic and tipped workers. Connection to racism: black people are overrepresented in tipped industries (farming, domestic work, restaurant work). Minimum wage today in 43 states: 2$ Women must debase themselves to attract tips. Industry w highest rate of sexual harrassment. In the 7 states where there is a full wage with tips on top, sexual harassment is halved. Argument: tobacco/cotton industries said they couldn"t stay in business if they paid a liveable way.
