This anaerobic bacterium can survive a wide temperature range from - 1. 5 to 45 degrees celsius, allowing survival in cooler places such as the refrigerator (lado and yousef). Cold shock proteins (csps) and cold acclimation proteins (caps) have been identified in the microorganism which aid their survival in cold temperatures by allowing synthesis to continue (chan). The bacterium can also tolerate a wide ph range between 4. 0 to 9. 6 due to its acid tolerance response (atr), which allows for the survival in high/low acidity such as on food or in the stomach (chan). When the temperature is altered, the bacterial cells alter their lipid membrane composition so they can adapt to their environment while maintaining their physical state (chan). The microorganism is a rod-shaped, gram-positive and non-spore forming bacteria that can move by tumbling in approximately 20-25 degrees celsius via its peritrichous flagella (abdollah).
