HTM 4050 Lecture Notes - Lecture 3: Oenology, Dessert Wine, Baco Noir
Document Summary
Lake erie north shore: sub appellation south islands. Prince edward county: no additional appellations to know. Niagara peninsula regional appellations: niagara escarpment, niagara on the lake. European hybrids (french, german and others) which include baco noir, seyval blanc and vidal, are also native to europe. Hybrids, which originate from two parent vines, arose from breeding programs that sought to avoid having to graft vinifera vines on phylloxera resistant rootstocks while keeping the flavor characteristics and quality of european varieties. While less popular than pure" vinifera varieties, hybrids have their place in winemaking: vidal is the main grape cultivar used for ice-wine production in ontario. The first icewine (eiswein) is believed to have been made in germany in the late 1700s when freezing weather struck before the grape crop could be harvested. The winemaker persisted, harvesting and pressing the frozen grapes and fermenting the juice to a sweet wine.
