The shape of a protein is essential to its function! Denaturation: breaking up the protein structure: unfolding the structure. Cooking an egg: heat, acid, agitation can denature a protein. Protein functions: structure, makes enzymes, protein helps with transport, protection from disease, skin, antibodies, movement, fluid balance. Protein in health and disease: kawshiorkor: protein deficiency: bloated belly look, marasmus: protein and energy deficicency: starvation.
