We devote a lot of time looking at fat. Lard come from duck and geese and so there are regions of france that depend on fat from animal: the domain of olive oil, the predominant fat is olive oil, mediterranean regions of france. The most obvious observation about fat is we don"t understand everything we know about fat in terms of health. We make decisions based on bad judgements.
