Rudaments of flavor last week we talked about- While we use flavor and taste interchangeably it isnot the same. Flavor is what the brain tell us a summary using all our sense (including our intelletct) We are learning a lot about taste that we did not know ; all of our assumptions were wrong (4 basic taste(sweet sour bitter ____) there was no scientific literate that supported that idea. Infact there is a taste call umami that e(cid:454)ists __ othe(cid:396) pa(cid:396)ts of the (cid:449)o(cid:396)ld the(cid:396)e is a sa(cid:448)ou(cid:396)(cid:455) taste as the 5 basic tastes. We have more recpotors on our tongue that can taste more than just the 5 basic tastes. We all have to deal with common refered to as ominovers delema paul rossen by michael polen ; the delemia is that we are harming ourselves through our diet. We are evolved to eat both plante and animla matieral. We are to eat a wide variety of foods
