NUTR 207 Lecture 5: Sulphur exists in the oxidized form sulphate in food and water
Document Summary
Sulphur exists in the oxidized form sulphate in food and water. Sources are food+water/ amino acids methionine and cysteine= dietary proteins. Sulphur containing side chains in cysteine link to each other via disulphide bridges which stabilize protein structure. Skin hair nails= contain rigid proteins= contain sulphur. No rda bc body meets needs already (as long as protein present in diet) Iodine exists as iodide in body in small amount and is essential to life. Functions in body= forms part of 2 thyroid hormones that regulate body temp, metabolic rate, reproduction, growth, rbc production, nerve and muscle function. Sources= ocean major source but salt iodization eliminates iron deficiency. If thyroid hormone is low, it stimulates the hypothalamus in the brain to send a releasing hormone trh to the pituitary gland. Hypothalamic-pituitary axis is important in the regulation of a lot of hormones. Hypothalamus senses something and communicates with the pg to release something.
