The increased surface area = far more efficient digestion of triglycerides by lipase as the lipase can nibble at more available small droplets outside of the fat globule now. The droplets are all coated with bile salts, how is lipase going to get access to the lipid to start digesting it colipase. End result this turns the triglyceride into monoglycerides and free fatty acids which are ready to be absorbed as they are small enough. Complex molecules are broken down into small molecules during the process of digestion, we are then able to absorb these small molecules. Absorption is the passage of simple molecules through epithelial cells of the gi tract and into the body. The absorption of nutrients takes place in: the small intestine (all macronutrients, 80% of micronutrients and 85% of water) and the large intestine (the remaining water and micronutrients) The mouth and stomach can also absorb toxins and drugs, e. g. aspirin and alcohol.
